RECIPE

RABBIT LOIN WITH EGG SAUCE AND VEGETABLES

INGREDIENTS

  • 4 rabbit loins
  • 5 egg yolks
  • 150 g mixed vegetables (asparagus, red onion, radicchio, cherry tomatoes, Brussels sprouts)
  • 700 g rock salt 
  • 300 g brown sugar
  • Salt
  • Pepper
  • Extra-virgin olive oil
  • Mustard seeds
  • Cider vinegar


METHOD

Marinate the rabbit loins in a mixture of the salt and brown sugar for 20 minutes, rinse and dry .
For the egg sauce boil the 5 eggs for 7 minutes. Remove the yolks and blend just the yolks with water and the cider vinegar. Add the mustard seeds.
Blanch the asparagus and Brussels sprouts in boiling water. Blanch the red onion in acidic water. Leave the cherry tomatoes and radicchio raw.
Seal the loins on all sides over a high heat and leave to rest. Place the egg sauce on the plate, then the loin and finally a mixture of vegetables.
